Broccoli Soup

Ingredients (Serves 3)

Vegetables πŸ₯¦

  1. Broccoli – 250 gm
  2. Garlic – 3 pieces
  3. 1 small onion

Seasoning πŸ§‚

  1. 1 teaspoon oregano
  2. 1 pinch grated nutmeg
  3. 1 teaspoon ground pepper
  4. 1/2 teaspoon salt
  5. 1/2 teaspoon basil

Dairy 🧈

  1. 1 tablespoon butter
  2. 1.5 cups milk

Others 🌾

  1. 1.5 tablespoon whole wheat flour
[left] butter, on plate [going clockwise] -flour, basil, oregano, nutmeg, onion, garlic

Steps

  • Wash and cut the broccoli florets. Chop the onion and the garlic. There’s no need to cut them finely, as they will later be ground in the mixer
  • Boil the broccoli in 1.5 cups of water. Let it boil for 6-7 min, until the broccoli looks cooked and slightly color changed.

  • Melt 1 tablespoon of butter in a sauce pan . Add the chopped onions and garlic to it, and let it cook until the onion becomes transparent
  • Add 1.5 tablespoon of atta to the butter as well, and allow it to cook for 2-3 min
  • Once done, add the cut broccoli into the mixture. Filter out the vegetable stock before adding the broccoli
  • Switch off the gas, and leave the broccoli mixture to cooler
  • After 10 min of cooling, put the broccoli mixture in a mixer and blend the mixture until it becomes a uniform green paste. Take care to ensure that there are no lumps in it
  • Pour this back into the saucepan , add the vegetable stock ( in which you had cooked the brocolli) and add 1.5 cups of milk. Gently heat in low flame and stir it (do not boil)

Your soup is now ready to serve! 🍡
