Salad with sour cream and dill dressing

Dill is known as “Sholpa” in Bengali, Shepu in Marathi or Savaa or soa bhaji.
It is rich in nutrients, antioxidants and fiber.

Ingredients:

1 bowl veggies of your choice for the salad like cucumber, carrots, tomatoes, spring onions, onion, capsicum green, yellow and red.

1 cup – curd

Small bundle of dill leaves

2-3 sprigs of mint leaves

2 tsp olive oil

3-4 garlic pods

1/2 a lemon juice

1 -2 tsp chilli flakes

Salt to taste

Method :

For the sour cream:

Filter the dahi overnight in the fridge. Leave it on a wide strainer with a vessel to hold .Thick creamy sour cream is on the strainer next day.It’s really easy.

For the Dill Dressing:
In 2 teaspoons of olive oil add diced garlic around 3 cloves. Stir in the roughly chopped Dill , Chilli flakes . Stir in the Sour cream.Add salt and juice of lemon to taste and 2 to 3 sprigs of mint.

Mix the Salad with the dressing . Adjust the salt, lemon and Chilli flakes to taste.

I like to use boiled black chickpeas in this salad, besides the veggies Cucumber, tomato, spring onion, capsicum, onion, red or yellow capsicum add good colour and nutrition.
