Ingredients
Moong dhal- 1 cup
Urad dal- 1 cup
Salt – to taste

Method
Wash the dals separately & soak separately for 2 hours.

Grind them separately to smooth paste.

Grind the Urad dal till you get bubbles like for regular idly.
Mix them well and add required amount of salt.
Allow it to ferment for about 8 hrs say overnight at room temperature . It rises well once fermented.

Pour in greased idly mould & steam for 10 minutes.
We get real soft idly. Goes well with any chutney .

Alternatively add onion , grated carrot, chopped green chillies & curry leaves & cook it in Appe mould to make paniyaaram or Appe.
If you use a non stick mould the oil use is also minimalized making it nearly fat free too.
Both the items taste as good as regular idly and paniyaaram. They are protein rich and super healthy. It’s especially good for people who want to cut carbohydrates in their diet by avoiding rice .
