Kakiri is yellow cucumber or Vellarikai
Ingredients:
Kakiri chopped into small pieces,
One chopped onion,
One chopped tomato, 3-4 curry leaves,
One green chilli ,
Coconut Milk -1/4 cup, (can use coconut milk powder also)
Mustard seeds-1 teaspoon
Cinnamon stick -1 small,
1/2 teaspoon red chilli powder,
1/2 teaspoon turmeric powder,
Oil -1-2 teaspoon
Salt to taste.
Method:
Chop the kikiri into 2 pieces. Peel the skin and remove the seeds. Cut into medium sized pieces. Wash and add salt and turmeric powder and pressure cook for two whistles.

Take 1 tablespoon oil in a pan. Add mustard seeds and cinnamon stick. Add green chilli slit, curry leaves, chopped onion, turmeric powder and red chilli powder. Fry till golden brown. Then add chopped tomato. Add salt. When tomato becomes soft , add the boiled Kakiri. Cook for 5 minutes.

Add Coconut milk. Cook for 2 minutes. Subzi is ready to serve.
