Ingredients (Serves 3)
Vegetables π₯¦
- Broccoli – 250 gm
- Garlic – 3 pieces
- 1 small onion
Seasoning π§
- 1 teaspoon oregano
- 1 pinch grated nutmeg
- 1 teaspoon ground pepper
- 1/2 teaspoon salt
- 1/2 teaspoon basil
Dairy π§
- 1 tablespoon butter
- 1.5 cups milk
Others πΎ
- 1.5 tablespoon whole wheat flour

Steps
- Wash and cut the broccoli florets. Chop the onion and the garlic. There’s no need to cut them finely, as they will later be ground in the mixer
- Boil the broccoli in 1.5 cups of water. Let it boil for 6-7 min, until the broccoli looks cooked and slightly color changed.

- Melt 1 tablespoon of butter in a sauce pan . Add the chopped onions and garlic to it, and let it cook until the onion becomes transparent
- Add 1.5 tablespoon of atta to the butter as well, and allow it to cook for 2-3 min
- Once done, add the cut broccoli into the mixture. Filter out the vegetable stock before adding the broccoli
- Switch off the gas, and leave the broccoli mixture to cooler
- After 10 min of cooling, put the broccoli mixture in a mixer and blend the mixture until it becomes a uniform green paste. Take care to ensure that there are no lumps in it
- Pour this back into the saucepan , add the vegetable stock ( in which you had cooked the brocolli) and add 1.5 cups of milk. Gently heat in low flame and stir it (do not boil)
Your soup is now ready to serve! π΅
