Ingredients :
Fresh turmeric : 3 small
Green chillies: 2
Lemon : 2
Salt : to taste
Sesame oil : 1 tsp
Mustard seeds : 1tsp – take 1/2 tsp and dry roast and powder
Fenugreek seeds : 1/2 tsp dry roast and powder
Asafoetida : 1/2 tsp

Method :
Scrape the fresh turmeric and then chop it into tiny bits. Add chopped green chillies and salt to it.

Now heat the oil and temper with 1/2 tsp of mustard seeds . Off the flame and then add the Asafoetida, fenugreek and mustard powders .

Mix this with the chopped turmeric . Now transfer to a small glass bottle and then add the lemon juice to submerge the pieces and mix well .
Close tightly and refrigerate for 4-5 days so that the turmeric pieces take in all the flavors .

Fresh turmeric pickle is now ready to be eaten . It lasts a couple of weeks in refrigerator.
