Brinjal stuffed

Ingredients

Brinjal small variety 1/2 kg

For stuffing

Coconut – 2 tblsp grated

Besan – 2 tblsp

Red chili powder -1 tsp

Coriander powder – 1.5 tsp

Cumin powder – 1 tsp

Turmeric powder – 1/4 tsp

Juice of half a lemon

Salt – to taste

For tempering

Oil – 2-3 tsp

White sesame seeds – 2 tsp

Mustard seeds – 1 tsp

Hing – a pinch

Method :

Mix all the ingredients for the stuffing along with 1-2 tsp oil .

Cut the brinjal cross wise as seen in photo. Let the crown remain.

Stuff the brinjal with the above mixture and pressure cook it for 2 whistles.

Now temper it with mustard seeds, sesame seeds and a pinch of hing in 1-2 tsp of oil.

Garnish with chopped coriander leaves .
