Eggless Fruit & Nut cake

This cake doesn’t have maida, eggs or sugar.

Ingredients:

2 cups -Water

1/2 cup -Dried Cranberries

1/3 rd cup – Dried Apricots chopped

1/2 cup -Raisins 10-15 Dates chopped 1/2 cup – Olive oil or canola oil

1 tsp – Vanilla Extract

1 3/4 cup – Wholewheat Flour. I used 1 cup wholewheat flour and 3/4 cup jowar and bajra flour

1 1/2 tsp – Baking Soda
1/2 tsp – Salt

1/2 tsp – Cinnamon Powder

1/2 tsp – Nutmeg Powder

1/4 th cup – Walnuts chopped

1/4 cup – Pecans chopped

1/4 th cup – Almonds chopped

1/4 th cup – Cashews chopped

Method:

1.In a small sauce pan take 2 cups Water and soak the Cranberries, Raisins and Dates . Cover the pan with a lid and cook on medium heat for 10 minutes.

2. Pour the above into a large mixing bowl.

3. Now add oil and mix well. Allow mixture to cool for about 10 minutes.

4. Add Vanilla Extract and Rum or Brandy (optional) and mix.
Preheat oven to 350 F
5. In a separate bowl, combine all the Flours, Salt, Baking Soda, Cinnamon Powder and Nutmeg Powder.6. Slowly incorporate (fold in) the dry ingredients into the wet ingredients.

7. Fold in Nuts and Candied Orange Peel.

8. Pour mixture into a greased bundt pan or any pan other suitable pan .

9. Bake for 35 – 40 minutes until toothpick comes out clean from the center.

10. Allow cake to cool in the pan for 30 minutes and flip out onto a baking rack to further cool.
