Unique Spinach With Gram flour Subzi

Ingredients:

Spinach leaves( separated from stem) -1 bunch

Gram flour- 2 tbsp,

Ginger thinly sliced ,

Garlic thinly sliced,

finely chopped onions 2,

finely chopped tomatoes 2,

red chilli powder-1 tsp,

coriander powder-1 tsp,

turmeric powder-1/2 tsp,

carom seeds(ajwain)- a pinch,

coriander seeds- 3-4,

bay leaf -1,

1 small piece of cinnamon,

cumin seeds ( jeera) -1/2 tsp

cloves -2,

green chilli thinly slit -1

fresh cream -1 tbsp,

salt to taste

& oil.

Method:

Wash the spinach leaves and chop finely.

Transfer half of the leaves in a bowl. Add gram flour, ajwain, coriander seeds, red chilli powder, Add salt and a tsp of oil. Mix well. Make a smooth dough. If required , add a few drops of water.

Then take the dough and make oblong shapes and steam in a steamer or pressure cooker on medium flame for 7-10 minutes. Keep aside.

Heat oil in a pan. Add jeera, bay leaf, cinnamon and cloves.Add ginger and garlic. Mix well. Add chopped onions. When onion turns golden. add chopped tomatoes. Cook for 2-3 minutes.

Add turmeric powder, red chilli powder, coriander powder and salt. Add fresh cream.Then add chopped spinach leaves. . Add 2 cups of water and close the pan and cook for 5-10 minutes in low flame . Add the slit green chilli.

Then add the steamed spinach with gram flour pieces. Mix well. Close the pan and cook for another 5 minutes till the subzi boils . Switch off the gas , and the subzi is ready to serve. Can be served with rotis or rice.
