Foxtail millet (kangni ) halwa

This is a Karnataka dish called Halbai. It can be made with rice , wheat or ragi. When you make with Ragi you have to grind and squeeze the water out and make it from that liquid. Quite a laborious process. When made with rice you don’t need to squeeze the water out. I made this with foxtail millet . This is a super easy recipe but tastes really yummy.

Ingredients:

1/2 cup foxtail millet

1 cup jaggery

1.5 cups coconut

3-4 pods cardamom

Method :

Soak Millets overnight. Then grind everything together with 1 cup water. Should be dosa batter consistency.

Pour this into a vessel which has been greased with a little ghee and pressure cook it in a pressure cooker for 3 whistles or in the instapot for 12 minutes .
Take it out. Let it cool. Cut it to pieces. Eat and enjoy.
