Brinjal (Egg plant) Curry ( Srilankan Style)

Srilankan Name: Wambattu Moju

Ingredients:

Brinjal-4,

Green chilli -1,

Onions-2,

Tomato-1,

Ginger garlic paste or grated / chopped ginger and garlic – 1 tsp

Jaggery- 1 teaspoon,

Turmeric powder-1/2 teaspoon,

Red chilli powder -1 teaspoon,

Tamarind – a pinch,

Coriander leaves chopped,

Salt To taste

Oil

Method:

Wash and cut the brinjal into thin or round slices.

Add some turmeric powder and salt and keep for 5 minutes. Then deep fry in oil well till it becomes crisp.

Heat oil in a pan. Add ginger garlic paste and green chilli slit from centre. Fry and add the onions chopped into thin slices. Fry well till crisp and brown.

Then add tomatoes chopped into small pieces. Add turmeric powder, red chilli powder and salt. Cook for some time till the tomatoes become soft. Soak tamarind in water for 10 minutes and remove the pulp . Add the pulp once the tomatoes get cooked. Add jaggery powder and mix well. Let it cook in low flame till gravy becomes thick.

Then add the fried brinjal and cook for a few minutes. Garnish with coriander leaves and serve with Poori or Chappathi.
