Mixed vegetable Kadhai

Ingredients:

Cauliflower – 3-4 florets

Potato – 1

Carrot – 1

Ladies finger- 7-8

Baby corn – 5-6

Capsicum – 1

Peas – handful

Onion – 1 finely chopped

Garlic – 4-5 finely chopped.

Tomato – 1

Paneer – 150 gms cut into cubes.

Coriander leaves – for garnishing.

1 teaspoon each of red chilli powder, coriander powder, roasted jeera ( cumin) powder, aamchur ( dry mango) powder.

1/2 teaspoon of garam masala powder, 1/4 tsp turmeric powder and salt to taste.

Method:

Cut the veggies into slightly big chunks.

Take 1-2 tsp of cooking oil in a frying pan ( kadhai ) and add the chopped garlic and onions and fry till the onion softens and turns light pink.

Add the chopped potato and carrots . Add the turmeric, red chilli , jeera and coriander powders and mix well.

Now add the remaining veggies ( except for the tomato ) . Add salt to taste. Close the kadhai with its lid and cook on slow flame for about 10 mins. Stir it once in between so that all the masalas get mixed well with the veggies. The veggies cook in their own juices so there is no need to add water.

Once they are nearly cooked add the tomato, paneer pieces, aamchur powder and garam masala powder and mix well and cook with lid closed for another couple of minutes.

You can garnish it with the coriander leaves and a dash of lemon juice if you desire extra tanginess.

Your healthy Sabji is ready in a jiffy to be served with rotis .

You may add other vegetables of your choice like yellow pumpkin, mushrooms , sweet potato etc .The quantity of each vegetable can be altered according to your liking too.

This dish is super tasty despite using very little oil and hence can be thoroughly enjoyed even by the calorie conscious.
