Appalam, Vadam & Vathal series – part 4 Arisi Vadam

Ingredients

Rice flour – 1 cup ( you may use even the shop bought one)

Green chilies – 3

Salt – to taste. Now can the number of ingredients get lesser than this .

Method

Mix 1 cup of rice flour in one cup of water . Make sure that there are no lumps.

Grind about 3 green chillies finely with little water. Strain the ground chilli mix & add only the liquid to the above along with the required amount of salt.

Now boil 2&1/2 cups of water in a large frying pan ( kadhai).

Add the rice flour mixture to it & keep stirring continuously . It quickly thickens and leaves the sides of the vessel ( should gather like kozakkattai mavu )

For checking whether the dough has reached the right consistency touch the flour with wet hand . It should not stick to the hand.

Now allow it to cool. Then make the vadam on a clean piece of cotton cloth or plastic sheet using the nazhi. You can make vadam even if you are having cloudy days as it dries well even indoor under the fan though it may take a day more than the sundried ones.

Tips

You may use 1 cup rice plus 1 tablespoon sabudana – soak them together for 4 hrs and then grind it to a smooth paste having consistency like dosa batter instead of using rice flour and then follow the same procedure as above.
