Tomato rice

Ingredients:

1 cup rice

4 large tomatoes

1 large onion chopped fine

2 green chilies chopped fine

1/2 teaspoon turmeric powder

1 teaspoon salt ( or according to taste)

For masala

1 teaspoon oil

6 whole red chilies

2 teaspoons coriander seeds

3 teaspoons bengalgram dal

1 teaspoon urad dal

1/4 th teaspoon fenugreek seeds

1/2 teaspoon asofoetida

2 tablespoons grated coconut 🥥

Tempering

1 -2 tablespoons ghee

1 teaspoon mustard seeds

2 tablespoons groundnuts

Few twigs of curry leaves ( kadipatta)

Procedure :

Cook the rice with 2 cups of water and allow to cool.

Chop and blend the tomatoes in a mixer grinder.

Roast the ingredients for the masala on slow flame in a frying pan,cool and grind it to a fine powder when cool and set aside.

Now take the ghee in the frying pan, add the mustard and let it splutter before adding the groundnuts and frying them . The curry leaves , onions and green chillies go in next . Sauté till the onions turn slightly brown.

Now the ground masala can be added , fry for a bit before adding the tomato purée. Salt and turmeric can be added at this stage and the tomatoes are allowed to cook till the raw smell is gone and it begins to thicken.

The rice can now be added and mixed well.

Tomato rice is now ready to be served hot along with some cucumber raita and fryums.
