Ripe Papaya Halwa

Ingredients

Ripe papaya grated or cut into small pieces, Sugar, Ghee, Food colour( Optional)

For garnishing

Badam cut into thin pieces, Pistachio, Cashew nuts.

Method

Heat ghee in a pan. Take Badam cut into pieces, ( preferably after removing skin)Pistachios cut and Cashews cut. Fry and keep aside.

In the same pan add some more ghee. Add the papayas ( I cut papayas into small pieces, can be grated also) . Sauté and cook well till ghee separates.

Then add Sugar( 3/4 cup for 1 cup of papaya if papaya is sweet, otherwise can add more) . I used brown sugar. Mix well. Can add food colour if you feel like either yellow or orange.( I didn’t add). Cook well . Add ghee in between. Keep stirring for about 10-15 minutes. Finally add the nuts.

Then grease a vessel/plate with ghee and spread on it. When a little cool, refrigerate it for an hour. Then remove.

Invert it over a plate and cut into pieces..
