Fried brinjals in coconut milk gravy

Ingredients:

Brinjals cut into small pieces, not very small ( any size brinjal is okay),Chopped onions, Chopped tomatoes, 1 small green chilli slit, Tamarind water 1 tablespoon, Coconut milk or Coconut milk powder 1/2 cup( I used coconut milk powder mixed in water) , Red chilli powder 1/2 teaspoon, Turmeric powder, Mustard seeds,Oil, Salt snd Fresh Coriander leaves .

Procedure:

Wash and cut the brinjals into small pieces and deep fry in oil . Add a little salt to it after frying and mix well. In a pan take oil and heat.Add mustard seeds, turmeric powder, red chilli powder. Add green chilli, onions. Fry till golden brown. Add the chopped tomatoes. Cook for a while. Add tamarind water. Cook for two minutes. Add salt. Add coconut milk . Cook for a while till it thickens a little. Add the fried brinjals. Mix well. Switch off the gas and garnish with coriander leaves.

Dish is ready to serve. It can be eaten with Rotis, Rice or Puttu.
